Only thing I can think of is redundancy... however every double hook I have shot has been a slightly heavier pull then its single hook counterpart.

The double hook is generally smoother. They went to the single hook when Russia started making the stamped receiver with the rate reducer. I think they used the single hook, so that they would have room for the rate reducer. Having a hook on each side should keep the hammer more in line. With a hook on one side, the hammer might be at an angle slightly.
