Some thoughts on the compatibility of the side folder and the side mounted plate, as used on current Russian Kalashnikovs rifles:
All Russian AK-74 stocks fold to the left, as you know this is also true for the plastic folder used on the AK-74M and the AK-100 series. Since all of these rifle models come standard with a left side receiver mounted optics plate, this means the stock must clear the plate.
To do this, there is a rectangular cutout on the left side of the stock just for clearance of a side plate. Of course the stock will not clear a scope that is mounted to the rifle, and fold with it installed.
I would suggest it would be almost useless and foolhardy to aim such a rifle with the stock folded while using a scope to sight down. It would certainly be a difficult thing to do. As a ten year veteran combat arms instructor, I would never recommend the use of optics with the stock folded.
If the rifle is brought to action, it is recommended to unfold the stock, actually the rifle is carried at ready position in the extended position, as stated in the Russian military manual.
Only if the rifle is to be sling to the shoulder, will the stock be folded. If there is a need for long range shooting the rifle stock is always extended, and any optics would be mounted at this time. Due to the fact that this is a quick detach system, there is no worry concerning time delay during this procedure.
