I try. Excel spreadsheet with ammo total by caliber and firearms with serial #, description, date purchased and amount paid as well as current market value. Trying to update the market value is the hard part. At least once I year I try and check the auction sites and see what guns that match mine are selling for with emphasis on "selling" not just being offered.
The ammo is just for my use but the firearms inventory is something I wanted to do for my wife so that in the event of my death she would have some idea of what I have and it's approximate value.

I keep a binder containing images, serial numbers, purchase dates, values, etc. of each of my firearms. Each page is dedicated to one firearm. Whenever I change something on a firearm (stock, scope, etc.), I update the image and value. In regards to ammunition, I generally know off-hand about how much I have since I don't stock too many different calibers.
I figure that binder will come in handy if I ever have a gun stolen/lost or if I bite the dust. If I die, it will help with the prevention of a $1200 gun being given away for $100 like I often see.

As for firearms, I keep a log of the SNs, make, caliber and value, just like Skorpion, so that if I die and my wife sells the collection she gets close to the value vice giving them away.

Well I try to keep up on my inventory and seem to be adding and crossing
off so much that I had to quit until my son makes up his mind about which
he wants to keep. As far as ammo goes I wait until I run through 500 rnds
then replace, but always keep 1000 rnds per weapon, and 5,000 .22s

Try to, not very successful at the ammo inventory. Wrote down all firearms SNs in triplicate and stored two copies in two locations off site.
