    Pan Fired potatoes

    Cut two large idaho potatoes into 1/4" cubes.
    Put into a large bowl, add al little water and microwave 1 - 2 minutes to soften.


    In a large cast iron frying pan add a 3 tbs of oil

    When simmering hot add potatoes at first stirring and mixing vigorously

    After a minute add finely chopped onion (finely chopped garlic optional)

    Keep stirring periodically

    Pour in some good dashes of paprika and black pepper

    Season with salt and oregano (garlic powder or salt optional)

    Cook thuroughly to desired desire state. I perfer crispy, not not potatoe chip state.

    I start by frying bacon, then I fry the diced potatoes in the bacon grease with lots of onions, garlic, and peppers.

    I grew up on stuff like this.

    To this day one of my favorite meals is fried potatoes, cornbread and ham and beans. Pour a little canned pepper juice over the beans, awesome!
    Returns June 3rd.
