I was thinking about starting another project. Another non rushed thing. But an AR build. I have a few questions but i will start with bolts and headspace. Do AR uppers need to be headspaced to a particular bolt? If so how is this done?

If you buy a barrel with the barrel extension already attached, you should be good to go on headspace. A lot of folks still check headspace after completing a build just be on the safe side. A new bolt and go/no-go headspace guage set for whatever caliber the chamber is made for is needed to check this. It is not recommended to use a used bolt on a new barrel.

On the Maple Leaf one, what is the R for on the selector? [S]afe and [R]etard? or [r]etaliate?

Repetition. .. Its what the Canadian military calls the semi auto part. The receiver is a copy of the Canadian military one with the auto part missing. Its all good though because as far as I know the Canadian military never orders full auto... I've only done it a few times and it was basically a treat from command after a good exercise or successful training. I could never hit anything with it.
