Um, isn't this where we talk about smoking and such?

It is! I'm going to break into some of the sticks from the box pass a little later this afternoon, but for now....

Finally got my controller back from BBQ Guru, so I'm giving it a spin this afternoon to make sure its functioning properly.

And yes, the egg has a lot of miles on it, excellent purchase, as you well know. Nothing too special, just some spare ribs. :)

I'm using a 50/50 mix of apple and cherry for smoke on these. The wife prefers fruit wood over hickory. Personally, I love hickory, but this is good also. :)

Went out and took my first peak since they went on at 12:30, to make sure I had plenty of water in the pan. Looking good. :)

ight i'm back.. knocked out 3 ten inch stainless welds and 4 2inch carbon so far. on a roll bitches!! now for 9 to hurry up and come so i can drink a couple of beers!!!!!!!

Damn, these were great. I've done better, but these were as good or better than most rib joints serve.

Well, another successful cook, the wife and chilrens sure do like pork ribs. I look like a backyard hero and have the perfect excuse to swill a few beers. Everyone knows you can't BBQ without downing some suds. ;)

Also, Matt, I had forgoten to mention this before, but over the winter I took your advice and bought a Thermapen. Nice damned thermometer!
It'll come in handy cooking the tri-tip. :)

I don't think the tri-tips have really made it to the east coast yet. I've heard that its the most common cut of beef to grill out in California, but I don't think I've ever had one.

I like rib-eye for steak on the grill, but being in the south I get a lot more boston butt, pork chops, and chicken.

think we are going to go with a brisket, a boston butt, and a few steaks (ribeye's)!!! and man you got me wanting to cook a freakin tri-tip so prolly going to go get one in the morning. we at work right now trying to knock a few of these little pipe lines out for them since there going to let us off for two whole days and all! good thing about there going to still pay us perdem for the two since its labor day and all.

Seeing more & more of the egg-style cookers popping up. My neighbor down the street has a couple of them, one old & another one he just got.

I'm hopelessly old-skool...went out a few months ago & bought another 22" Weber kettle. I like to use lump charcoal w/ an electric igniter. Be doing summa grillen this Labor Day weekend... if it stops raining.

I use a Weber kettle when we go RV'ing. They're great for grilling, but not so much for smoking. Too hard to regulate heat.

Nothing wrong with a well prepared rib-eye, no sir! ;)

Tri-tip is just another cut to cook. They taste great but are usually quite thick, so you do want to cook them by internal temp and not by just eyeballing it. If your fire is too hot it will look done outside but might still be raw at the center.

hell they were talking about putting a whole pig in the ground tonight and letting it cook till tomarrow. soon as we passed a stand that sold whole hog they started talking about it. think i talked them out of it cuz thats a lot of work and beers to go through all night.lol, might needs some help when i put on the tri-tip on tomarrow jefferson since i've never cooked one. and a decent rub to add to the mix. you gonna be aroud tomarrow afternoon?

Been a very busy morning! Finally got a minute to sit down a crack a cold one. I've got 3 racks of loin ribs on the pit with some homemade rub, cherry and hickory chunks.
J- Thermapen is the only way to roll. :2cents: Looking forward hearing about to your tri tip cook.

Nice! Those look great. You know, the only way I can serve ribs without sauce is to cook at least 2 slabs of St Louis style spares. I personally prefer them without, but the clan throws a fit.

I understand and feel your pain! I like them both ways and alternate or do one of each like you do. The sauce finish versus the sauce on the side...its like the .45 vs 9mm debate...LOL. Can't go wrong either way!:lool:

Geeze, its raining. Most of this is missing us just to the south, but once its stops and warms up this afternoon, it'll be 95 degrees with 90% humidity. Crap!

Oh well, I need to make a store run. I'll be back.
