I'm cooking a brisket and stocked in some brews. I also picked up a bottle of Lismore scotch. Its a Speyside single malt, plus it was on sale! Should prove interesting. Not sure what I'll be smoking just yet.

Since I'm a Chiefs fan, I have to root for Denver to lose, so I guess I'm rooting for Baltimore. At least Ray-Ray "the knife" is no longer on their team.

Shouldn't be too bad. :)

I'm just glad a meaningful NFL game is finally going to be on.

Matt, have you ever tried the Lismore hooch? On another forum some guys were going on and on about it at its price point.
On sale this was $25.00.

No sir I can't say that I have. Let us know your impressions. There are certainly some fine ones around that price.

I'll do it. Also I was off on the price. I looked at the receipt again and it was $23.00 per jug. :)

Just did my first temp check on the brisket. Its stalled at 153, which isn't a surprise. Its going to need probably two more hours I'm guessing.

I'm jealous. Leftovers in my house tonight. Good leftovers, but still leftovers. LOL.

Dang, this thing is still at only 160 degrees internal. So, I'm foiling it and kicking the heat up to 250! ;)

This was a really thick tip portion, so it'll take longer than a chunk of flat.

Whatever, I've poured a glass of Glenmorangie and am about to fire up a Hoyo Epi #2. :)

Just checked it again, its at 180. So the weird 150 stall is over. It'll probably be ready to rest by 7 or 7:30. Heck, I'll have fresh, hot brisket sammies for half time!!!

Just checked it, 208, shut off all heat. An hour from now, I'll have some awesome, tender Q. :)

I trust the brisket was fantastic!?!? Do you foil for the last hour? Introduce any liquid? I'm always interested in what methods folks are using and their results. I've done a handful of briskets and I don't think any two have been done exactly the same. Only one was bad and it was the meat not the technique. Packer brisket from Wal Mart. I ended up cutting it down for chili and tacos.

Yep, it was tasty. I had some photos I took while cooking but the wife got home right at the time I was slicing some up. Then it was time for the game....

Actually I ended up eating three sandwiches which was probably more than I needed. Ended up breaking out the alka-seltzer before I went to bed.

Damned game didn't go right either, I hate the Donkeys.
