View Full Version : Fired Up The Primo!

I had a half pork loin roast in the fridge overnight with a handful of garlic cloves inserted into slits and then rubbed with olive oil, sea salt and fresh black pepper. It just went on the Primo with some acorn squash halves loaded up with butter, brown sugar, and dusted with cinnamon, allspice, cayenne, and salt. Shooting for about 2 hours at 325 with some cherry and hickory smoke.

This thread will evolve as things develop. :happy:

Nice! I need to get my cooker back in service. Yesterday would have been good but we had a track meet. :(

Yes and no. Its egg shaped and green, but not a big green egg. Its a Bayou Classic.

Yeah these controllers are the shit. Especially for items like brisket and shoulders. :) Staring at a thermometer for 11 hours kinda sucks.

Matt, its funny, when the wife bought me this cooker it was the only one sold here in Jefferson City. Now of course I could pick from 4 or 5 brands. Doesn't matter, this one has performed well.

Glad to see you gentlemen are getting with the program. I've been grilling out all winter long, as long as the snow depth was under 2 ft. :freeze::freeze:

I know...LOL. Didn't really eat a lunch. Plenty of leftovers to snack on later. Besides, I'm retired...whats a clock?

Will do. It all depends on where we end up buying a house. Our backyard where we're renting is about the size of death row prison cell. I want to move out into the middle of no where and the old lady wants to be near the city for work. We'll see what happens...

Yeah, the preferred choice of both your wife and you are classic. Wife wants to live in town close to the hairdresser, Hubby wants to live in the toolies where he can do as he pleases. BTDT.

Thanks Viking. The pork really took the garlic well. I will be doing this again, maybe with lamb.

Same here, I really like a grilled lamb chop but the wife wouldn't take a bite of one if I held her down.

There is an easy cheater method for this using clay flower pots. If you're interested look it up on You Tube. I think its Alton Brown.

Yesterday afternoon I was getting everything out of the fridge and the wife notices I had bought ribeyes and only ribeyes. Thats more cow than see wants to eat so she went to the store and got some fillets. Then my eldest strolls in informing me that he's taking his girl out to eat and to see a movie. I'm like okay, fine, whatever. Then he's whining for cash, fine, here, go. It was at this point I poured my first whiskey. So anyway, I did get some meat prepped for the grill.

Steamed and sauteed some asparagus and also in a different pan sauteed some mushrooms. Pretty good eats.

From the half beef we bought last year, the steaks are long gone. So I'm back to the butcher counter at Schnucks. If you buy from behind the glass you get prime cuts. From the cooler you get choice. I go with the prime for all of the obvious reasons. :)

Geeze, beef fillet is up to $21 per pound. While ribeyes are still under $6 per pound. :wazzup-sg:

Some time in this coming week I need to do a couple slabs of ribs. Damn that sounds good.

Pretty tasty. With the komodo I can hit 750 degrees. I can sear the hell out of them and still have it nice and rare inside.

Well, I kept the theme rolling this evening with a meatloaf. Talk about taking a simple dish and making it pop!
Sirloin and pork. Carrots, celery, onion, garlic, S&P, ketchup & mustard, worcestershire, an egg, some cubed fresh bread and breadcrumbs.
Glaze-Brown sugar, ketchup, mustard, sriracha, cider vinegar, thyme.
Cooked at 425* with oak and mesquite.
Simple but wow.

Oh man, that sounds nice. I may try that one next time I make squash. although I prefer my barley in other forms...LOL.
