We use his seasoning every day in the kitchen. We don't call it blackening season. We call it Fatman Spice. RIP Paul. I have met him a few times and eaten in his kitchens.

Back in the day, he was so large that he would cart around in a scooter. He had trimmed down over the years.

I've seen plenty of Southern relatives and friends live into their 90s and 100s. It is a matter of which foods, in what mix of diet and volume consumed vs. exercise. Cajun and Creole are French influenced and different from standard Southern fare and tend to have higher fat content.
