Two threads about one movie,both threads include discussion on whether beans belong in chili.Some other kooky things like cinnamon and chocolate should be included or excluded in chili.

And historically speaking, Chili evolved from Texas cowboys out on the range. Beans were a staple "chuckwagon" food. They were cooked at every meal!

And then the Spanish influence of the Southern Cowboys (Gauchos, Vaqueros and Charros) came along. They cooked with a lot of peppers and made Moles (pronounced Mo-Lays) that actually included chocolate (cocoa beans, or cacao plants, originated in Central and Southern America). Bring together the Beef of the cowboy, the beans of the chuckwagon, and the mole of the gauchos, and you have today's CHILI!!!!!!!!!!!!!

So, this isn't too unnatural!!! ;) :p

I like pintos too, but not in chili.

You know the cowboys would have eventually added peppers and onions to the bean/beef stew.
I bet no real cowboy would ever consider chocolate of cinnamon as an ingredient.

FWIW There's chili, and there's chili con carne. Seems to me that would indicate a stand-alone bean dish of some sort, and the same dish, with meat added.

I like beans in chili, Pinto, Navy, Kidney... Whatever is available.

IMHO, good chili also requires hot peppers of some type, I prefer Habaneros.

I put kidney beans in with the beef, onions, peppers, celery(yea I'm a Yankee. Shutup!), ect.
Without beans chili is just spicy meat soup.

I don't believe the theory of Global Warming.
Beans produce Methane gas when digested.
This Methane is then expelled out the ass
and contributes to Global Warming, so they say.

I do not belong to Gore's crusade and will continue to eat beans in chili.
I will do my best to expel Methane every chance I can.

Every Chili recipe is different, and I like them all (almost).

When I make my own poor mans chili, its high fat ground beef, canned chili beans, canned diced tomatoes, a lot of canned green chilies, fresh jalapenos from the garden, and lots of dry spices, mainly garlic powder, onion powder, dark chili powder, lots of cumin, smoked paprika, black or white pepper, and salt. Optional ingredients include fresh onion, fresh garlic, fresh peppers (whatever you got), hot sauce (not Texas-Pete).

I like to poor my chili over stuff to, including flour biscuits, corn bread, grits, rice, and especially tortilla chips. Whether they're fresh chips to scoop with or broken bad leftovers to stir in my bowl with cheese.

Mine comes out different every time according to the availability of ingredients.

I forgot the most important part of all.

When you add the dry spices, and it gets like its all sticking to the hot pan, pour in Shiner Bock and slow boil everything, allowing it to almost digest in the pot. Add as much beer is necessary so that it can boil long enough, and be as thick or runny as you like.

Bad poll that only allows one answer, in my case they are all yes and I'm surprised that more people didn't vote for chocolate. A chunk of unsweetened chocolate and a cored chopped up apple belongs in every good batch of chili.

Beans are optional, not necessary but a great stretcher and type of bean matters little, they all have their place. When I use beans I often mix them.

If it is a stand alone meal, it has gotta have beans. If it is to be used as a topping (like on hotdogs, chips etc.), no beans is best.

Chili over rice Cuban style, lots of times, one of my sisters favorites. That one definitely has lots of beans, wouldn't be Cuban without the beans. After I put on enough Tabasco I like it too.

Preferrably over Fritos w/ beans & LOTS of cheese. Over rice is good and cheese isn't an absolute necessity in this but it helps. My chili is made with beer. Not a DROP of water. Then some masa flour paste to thicken it a bit. It's always better the 2nd day and even better on the 3rd. The spices seem to come out after it's aged in the fridge for a couple of days then reheated...

So, anybody seen that chili movie, Skyline? :poundon:

Chili without beans is sloppy joe mix. I like chili for breakfast, with a couple of scrambled eggs on top of a bowl of chili and a side of rye toast.

WTF??? Damn Yankees... Noodles are for spaghetti... Freaking nasty northerners. Cinnamon is for toast and cookies and chocolate is for desert (or milk)...:whacky110:

I almost hate to say it but I think I could see that... May have to try it as chili dogs are a staple around my house and I have a big fresh pot of chili that I just gourged myself on. Now I'm headed to the store for some ice cream to cool my guts off...:D

Sides are optional....I like the nacho cheese doritos with my chili cheesedogs...they just seem to go good together...and a coke makes you burp....which is very satisfying. :D

For those of you who have lived in Texas, you know
how true this is. They actually have a Chili Cook-off about the time
Halloween comes around. It takes up a major portion of a parking lot at
the San Antonio City Park.

Judge #3 was an inexperienced Chili taster named Frank, who was visiting
from Springfield, IL


Frank: "Recently, I was honored to be selected as a judge at a chili
cook-off. The original person called in sick at the last moment and I
happened to be standing there at the judge's table asking for
directions to the Coors Light truck, when the call came in. I was assured by the
other two judges (Native Texans) that the chili wouldn't be all that spicy
and, besides, they told me I could have free beer during the tasting, so I
accepted".

Here are the scorecard notes from the event:

CHILI # 1 - MIKE'S MANIAC MONSTER CHILI...
Judge # 1 -- A little too heavy on the tomato. Amusing kick.
Judge # 2 -- Nice, smooth tomato flavor. Very mild.
Judge # 3 (Frank) -- Holy shit, what the hell is this stuff? You could
remove dried paint from your driveway. Took me two beers to put theflames out. I hope that's the worst one. These Texans are crazy.

CHILI # 2 - AUSTIN'S AFTERBURNER CHILI...
Judge # 1 -- Smoky, with a hint of pork. Slight jalapeno tang.
Judge # 2 -- Exciting BBQ flavor, needs more peppers to be taken seriously.
Judge # 3 -- Keep this out of the reach of children. I'm not sure what I'm
supposed to taste besides pain. I had to wave off two people who wanted to
give me the Heimlich maneuver. They had to rush in more beer when they
saw the look on my face.

CHILI # 3 - FRED'S FAMOUS BURN DOWN THE BARN CHILI...
Judge # 1 -- Excellent firehouse chili. Great kick.
Judge # 2 -- A bit salty, good use of peppers.
Judge # 3 -- Call the EPA. I've located a uranium spill. My nose feels
like I have been snorting Drano. Everyone knows the routine by now.
Get me more beer before I ignite.Barmaid pounded me on the back, now my
backbone is in the front part of my chest. I'm getting shit-faced from all
of the beer.

CHILI # 4 - BUBBA'S BLACK MAGIC...
Judge # 1 -- Black bean chili with almost no spice. Disappointing.
Judge # 2 -- Hint of lime in the black beans. Good side dish for fish or
other mild foods, not much of a chili.
Judge # 3 -- I felt something scraping across my tongue, but was unable to
taste it. Is it possible to burn out taste buds? Sally, the beer maid, was
standing behind me with fresh refills. That 300-LB woman is starting to
look HOT...
just like this nuclear waste I'm eating! Is chili an aphrodisiac?

CHILI # 5 LISA'S LEGAL LIP REMOVER...
Judge # 1 -- Meaty, strong chili. Cayenne peppers freshly ground, adding
considerable kick. Very impressive.
Judge # 2 -- Chili using shredded beef, could use more tomato. Must admit
the cayenne peppers make a strong statement.
Judge # 3 -- My ears are ringing, sweat is pouring off my forehead and I
can no longer focus my eyes. I farted and four people behind me needed
paramedics. The contestant seemed offended when I told her that her chili
had given me brain damage. Sally saved my tongue from bleeding by pouring
beer directly on it from the pitcher. I wonder if I'm burning my lips off.
It really pisses me off that the other judges asked me to stop screaming.
Screw those rednecks.

CHILI # 6 - VERA'S VERY VEGETARIAN VARIETY...
Judge # 1 -- Thin yet bold vegetarian variety chili. Good balance of spices
and peppers.
Judge # 2 -- The best yet. Aggressive use of peppers, onions, and garlic.
Superb.
Judge # 3 -- My intestines are now a straight pipe filled with gaseous,
sulfuric flames. I shit on myself when I farted and I'm worried it will eat
through the chair. No one seems inclined to stand behind me except
that Sally. Can't feel my lips anymore. I need to wipe my ass with a snow
cone.

C HILI # 7 - SUSAN'S SCREAMING SENSATION CHILI...
Judge # 1 -- A mediocre chili with too much reliance on canned peppers.
Judge # 2 -- Ho hum, tastes as if the chef literally threw in a can of
chili peppers at the last moment. **I should take note that I am worried
about Judge # 3. He appears to be in a bit of distress as he is cursing
uncontrollably.
Judge # 3 -- You could put a grenade in my mouth, pull the pin, and I

Ingredients needed:

Cook 3-4 lbs of meat (preferrably deer but beef will work):D I use minced onion and garlic powder in the meat. Don't drain the fat if there is any...

Make a thick paste like mixture of Masa flour and water. Stir the mixture into the chili and simmer for another 20 minutes or so to thicken the chili to the desired consistancy.

It's basically just corn flour. A much finer grind than corn meal. It's used for tamales and I think corn tortilla as well...

Fine ground corn flour as opposed to coarse ground which is corn meal. I always have it on hand for a thickener for my chili because I like it thick, not juicy.

That's the only thing I use it for. A bag of it literally lasts me 2-3 years. I too like my chili thick. That way it "sticks to the ribs"...

I just had another big bowl for lunch and it's SO much better than last night. It always thickens up overnight and the seasonings seem to really come alive with age.

Silly Wabbit, chili's and bitter chocolate have been a pair for over a thousand years and it is a perfect touch in chili. We are talking squares of bakers chocolate, not candy bars or M&M's.

Just a pinch of cinnamon just a hint, if you taste it you put in to much. Call it a catalyst, you can't see it, smell it or taste it but it does something good to the over all taste. Only heathens dismiss it out of hand.

Beer is a yes, dark stout or ale is a plus, light beer is in the same class as noodles, for shame.

Noodles and macaroni is anathema for a chili head. It the stuff nightmares is made of and can be found in all Swedish Lutheran homes and church dinners in Wisconsin and Minnesota. Forgive them Lord for they know not what they do.

1 pound venison chopped in ½ inch pieces
½ pound ground pork sausage
1 large onion chopped, (1 cup)
1 cup beer
1 can water chestnuts
2 large tomatoes diced
15 Oz. tomato sauce
3 tsp chili powder
2 tsp ground cumin
¼ tsp dried oregano leaves
¼ tsp ground cinnamon
1 square bakers chocolate
1 cup masa flour
1 medium bell pepper in 1 inch pieces, (1 cup)
1 cup red, pinto or navy beans
Shredded cheddar cheese

Soak beans over night with ½ tsp of baking soda added to the water. Rinse thoroughly, discard old water and add beans to crock pot. Add beer and just enough water to cover beans.


Mix all ingredients except bell pepper, beans and cheese in 4 Qt. crock pot. Cover and cook on low heat setting 6 hours or till meat and vegetables are tender. Stir in bell pepper and beans. Add enough masa flour to thicken. Uncover and cook on high heat for 15 minutes or until slightly thickened. Serve with cheese.

Most people use 2 large stalks of celery instead of chestnuts but i don't like cooked celery, I prefer it raw.

My Chili Recipe

2lbs Ground Venison or beef(for the non hunters)
2lbs Ground Pork
2 large onions diced
4-8 cloves of garlic chopped (as much or as little to your preference)
2 tablespoons oil (for browning the meat,onion,and garlic)
6-8 serrano peppers chopped (more if you like your culo on fire :firedevil:)
4-6 tablespoons Chili powder (as much or as little to your preference)
4-6 tablespoons Comino powder (as much or as little to your preference)
Salt and pepper
2 cans whole peeled tomatoes rough chop(drain the juice and reserve)
2 bottle of Shiner Bock (1 for the chili and 1 for you)
4 cups water plus tomato juice
1 lb of beans (pintos,kidneys,or whatever you like)
1 small can of tomato paste (optional)

For thicker chili:
2 tablespoons masa flour mixed with a little water to thicken (optional)

Large stock pot:

Heat the oil to smoking,add the onion and peppers first.Once these have gotten a little color add the garlic and ground meat.Brown the meat,then add dry spices and mix well.

Add the rough chopped tomatoes,beer,water,tomato juice reserved,bring to a boil drop to a simmer add the beans and cook on low heat with a lid until beans are tender.For more tomato flavor add 1 can of tomato paste.

I prefer my chili to be more soupy than thick.

Serve with cheese,chopped sweet onion,sour cream,Frito corn chips,or saltine crackers.

Using a square of unsweetened chocolate or some unsweetened cinnamon isn't blasphemy. It just gives the chili a darker more earthy flavor. Its not to make it sweet or give it some weird twist, chocolate and cinnamon go hand in hand with beef. You might have had cocoa powder on a steak at a restaurant and didn't know it.

Venison Hamburger Chili

Ingredients


Olive Oil
12 oz. beer
2 cups diced onion (about 1 large)
1 cup chopped red bell pepper
1 teaspoon minced garlic
1 1/4 pounds ground venison
3 tablespoons brown sugar
2 tablespoons ancho chile powder
1 tablespoon unsweetened cocoa
1 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
2 (15-ounce) cans pinto beans, rinsed and drained
2 (14.5-ounce) cans diced tomatoes, undrained
1 (14-ounce) can fat-free, less-sodium chicken broth
2 chipotle chiles, canned in adobo sauce, minced
2 ounces unsweetened chocolate, chopped
1/2 cup light sour cream
Chopped green onions (optional)


Preparation

Sauté venison or beef hamburger in heavy large pot over medium-high heat until no longer pink, breaking up with spoon, about 8 minutes. Heat the oil in a large skillet over medium-high heat. Add onions and red bell peppers and sauté until they start to soften, about 15 minutes. Add them to the pot with the meat and mix in the spices, chili powder, chocolate and chipotle chiles. Add diced tomatoes, beans, and beer. Bring chili to boil, stirring occasionally. Reduce heat and simmer 20 minutes add Masa flour till thickened to the desired consistency, stir often.



Doing Ahead: Cool than refrigerate uncovered till cold, then cover and keep refrigerated for up to 48 hours or freeze for up to a month. Good way to have camp chili or make a quick meal without needing a lot of stove time.



Serve with sour cream, green onions, and cheese.

Nose cleaning, attitude adjusting, happy belly chili. Deer camp, company or just for those cold days when you belly needs warming and your sinus cavities need clearing.

1- 1/2 - 2 lbs. Ground Chuck
1- 1/2 - 2 lbs. Deer Sausage (thin slices)
1 can of Pinto Beans (drain juice)
1 can of Dark Kidney Beans (drain juice)
1 can of Black Beans (drain juice)
1 can of Diced Tomato
16 oz. jar of Picante Sauce (medium flavor)
1 can of your favorite Beer
1 large Yellow Onion (chop small)
1 large Bell Pepper (chop small)
6 ribs of Celery (chop small)
1 Jalapeno (chop small)
1 tbsp. Minced Garlic
6 tbsp. Mexene Chili Powder, (you guys are lucky, I can't get it up here unless I send away for it)
1 tbsp. Cumin
seasonings: Salt, Black Pepper, Worcestershire

In your large iron pot, brown the chuck and sausage.
Season with salt and pepper. Strain out the drippings and add all of the ingredients to the pot, enough water to just cover plus a cupful of beer, (real beer, not lite beer), and season to your taste.


Bring pot up to boil then cut heat to simmer for 2 hours. You may need to add a little more beer as the pot cooks down. Just taste when you do that in case you need a little more seasoning.


Serve over cooked rice. Hot skillet of cornbread, biscuits or crunched up soda crackers. Have a bottle of your favorite hot sauce on hand because if you are a chili head this will be kind of mild but most people will react actively.

Seems a lot of chili around here has noodlesi in it too... I know some people think thats insane. Must be a midwest thing? That should be another question. Noodles or not?!

Macaroni noodles in chili is crap. Saltines are good. Corn chips are the best.

Corn bread is best, corn chips are okay, saltines, rye bread, wheat bread, etc. are a last resort before you slide into insanity and do it with pasta. Having grown up surrounded by Swedes and Norwegians, Lutherans and Methodists Chili and macaroni was what I ate because it was what was there. Then I left home, joined the Navy, discovered Salsa's, Tabasco sauce, Cajun Cooking, Tex/Mex cooking and I was saved.

A few years ago we had a game feed at the local gun club I was in and my contribution was genuine cornbread. both regular, southern style and diabetic. All of it disappeared fast and received many compliments and requests for recipe's???

What blew my mind was how many of those people told me they had never eaten cornbread before.

I got the same reaction at deer camp a few years earlier when I made a big batch of lasagna. It went fast and the main topic of dinner was what was it??? These people had traveled the world, vacation in Vegas every year, had vacationed in Mexico but didn't know what lasagna was. Where ever they went they ate what they were familiar with. Chicken, steak, meatloaf, cheeseburgers, mashed potatoes and gravy and their condiments were yellow mustard, catsup, salt and pepper. You say rice and they think Chinese, You say Italian and they think Spaghetti, most of them think Chef Boyardee.

It baffles me little mind.

I reserve cornbread for beans,stew,and soups.I grew up with Zesta (Keebler brand) saltines with chili.Fritos were for chili pie.My ex and her mother preferred cornbread but could not make it unless it was a packaged type.I learned how to make from my mother using a cast iron pan,bacon drippings,and buttermilk.

Nothing better than Martha White buttermilk cornmeal, buttermilk (both BM meal and BM add to the "tang") and a smoking hot bacon drippings greased iron skillet. slapped in the oven @450 degrees until lightly browned on top.
I love the bottom crust being almost burned. Yummy.

I like beans in my Chilli as an enhancement.... NOT as the main body of the meal.

When I make chilli, I like using Caroll Shelby's brown box you find in the grocery store... I use hamburger AND diced Filet Mignon when I make it :) As for the spice, I've never put cinnamon in Chili... but I use ground CLOVES!

Seriously, next time you make Chili or Spaghetti, toss in a little ground cloves... cloves are used as a spice in a lot of Jamaican cooking :)

Filet Mignon is too much of a rarity for me grind up into something else. I'll wrap it in bacon and sear it.

Okay you got me...skillet!I heat the drippings and then pour the batter in while it is sizzling.Crisps up the bottom.

Directions
Put the chicken in the slow cooker (http://www.foodterms.com/encyclopedia/slow-cooker/index.html). Add 3 tablespoons of the chili powder and all the rest of the ingredients, except the beer. Stir everything together, cover, and cook on LOW for 6 to 8 hours.
Just before serving, stir in the remaining 2 teaspoons of chili powder (http://www.foodterms.com/encyclopedia/chili-powder/index.html), the beer, if using, and season with more salt and pepper, to taste, if desired. Divide the chili among warm bowls. Serve with the topping of your choice.
Know-How: Stirring in chili powder right before serving brightens the flavor of the chili.
Really lousy weather and I'm still feeling punky so I thought I'd try something different. I already have everything but the fire roasted tomatoes and I can fix that. I have had chicken chili before just not this recipe

My Mother's is just like my Grandma's.

Ingredients
2 cups yellow cornmeal
2/3 cup flour
1-1/2 tablespoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon of sugar (optional)
Dash of black pepper
1 and 2/3 cups buttermilk
2-3 tablespoons of bacon drippings

Preheat the oven to 400 degrees
Prepare the skillet by placing the bacon drippings in the skillet and roll the skillet or use a paper towel to coat the interior sides of the skillet with the bacon grease. Place the skillet in the pre-heated oven while preparing the following batter.In a medium size bowl, combine all the dry ingredients and mix well.Add 3/4 of the buttermilk and stir.Remove skillet from oven and slowly add about 1 tablespoon of the hot oil (bacon grease) from the skillet, into the batter, stirring well.Note: the skillet and bacon grease should be very hot but not smoking.Watching the consistency of the batter, carefully add remainder of buttermilk while stirring.The consistency of the cornbread batter should look like a thick pancake mix. This may require a little more or less of the remaining buttermilk. If the mix is too thick, add more buttermilk. If the mixture is too thin, add more cornmeal.Lightly sprinkle the skillet bottom with dry corn meal and pour in the batter.Immediately, place skillet in pre-heated oven.Bake at 400 degrees approximately 25 minutes. Time will vary according to the consistency of the batter you end up with. Watch the cornbread after about 20 minutes and cook until the top is golden brown.After the top is brown, remove the cornbread from the oven and flip the cornbread over in the skillet (see tip below), then continue baking another 5 minutes.

You can use the same batter add chopped jalapeños and onion and you have hush puppies.

Ah hush puppies. Absolutely have to have hush puppies when doing shrimp, crawdads, grilled catfish or deviled crabs.

1 1/2 cup yellow cornmeal
1/2 cup all purpose flour
2 tsp baking powder
1/2 tsp salt
1/8 tsp black pepper
1/8 tsp red pepper
3/4 cup milk
1/2 cup finely chopped onion
1 egg beaten
1/4 cup finely chopped parsley

(Otional: one jalapeno pepper with seeds minced instead of the black and red pepper)

In a medium bowl, combine all ingredients and mix well.

Heat 2 inches of oil to 375 degrees.

Drop by teaspoonfuls into the hot oil until golden brown. about 3 minutes if the oil is hot enough.

Cook the hush puppies in the oil that shrimp or fish has been fried in for that little extra go along taste.

Silly sister agrees with you on tapioca but its only a thickener in the recipe. As for peaches, I never did them in chili but I do have a jar of peach salsa in my refrigerator and a couple more jars in my pantry, (I hope). Seriously don't knock it till you tried it. I felt the same way about mangoes, still don't much care for them as a fruit but as an ingredient they are top rate.
