On edit. I wonder how to translate the lbs of whole foods into lbs of dehydrated food.

That's easy. Weigh what you are going to dehydrate before doing so. If you are buying prepackaged dehydrated foods, it should say on the label what the hydrated weight of the products is. If you are storing dehydrated foods, you must store extra water or it's worthless.
After clicking Recon's link and entering 2 adults a year's supply of food is a lot of food.
Grains:
300 lbs of Wheat
50 lbs of Flour
50 lbs of Corn Meal
50 lbs of Oats
100 lbs of Rice
50 lbs of Pasta
Legumes:
60 lbs of Dry Beans
10 lbs of Lima Beans
20 lbs of Soy Beans
10 lbs of Split Peas
10 lbs of Lentils
10 lbs of Dry Soup Mix
and that is just part of the list...
If that is for two people for one year; obviously SHTF needs to be short... :D
