    Tomorrow's menu at work is Red Beans with Anoulli Sausage and Cole Slaw! Browning sausage now...

    Sounds good! We had the smoker fired up all day today at the shop in the snow no less.....thick cut bacon, patty sausage, deer sausage, brisket (cooked 8 hours) pork chops, baked beans and potato salad. Who needs summer for good food??

    The guy in the material yard mobilized an "egg" smoker... We've done wings, sausage, ribs, etc...........

    Sure, thin sliced & chopped cabbage then add minced onion & bell pepper, dress with mayonnaise and the secret ingredient is prepared horse radish.

    Red Beans

    2 lbs Dry Red Beans, washed (Large are better than Small, but use what ya can get...)
    3 12oz links Anoulli Sausage, sliced & browned or grilled then sliced
    1/2 cup Red or Burgandy Wine, deglase pan if browning sausage
    2 Table Spoons Minced Garlic
    Large yellow Onion Course Chopped
    Bell Pepper Course Chopped
    Cajun Spice mix of choice, I used "Slap Yo Mama", to taste
    Bay Leaves, three
    Cayne Pepper Sauce, Louisiana is my favorite
    Fresh Chopped parsley (I cheated & used flakes, not near as good as fresh)
    1 Can Rotel Tomatoes... or two...
    Table Spoon soft beef bullion or Pork/Ham bullion if you can find it

    Forgot the secret ingrediant!

    1 Jar Italian Roasted Red Peppers chopped

    Throw them in a slow cooker and taste the next morning.
