Anyone here catch and cook Louisiana Crayfish?

Curious if anyone routinely goes out and catches them and also if they do, what is their preferred recipe for preparing them.

Not too many Lou'siana Crawdads up 'scansin way.

But if we did have 'em, personally I'd go Granny's route and smoke 'em!!!

Have caught & cooked a bunch of Virginia crawfish. We boil them with Old Bay seasoning.

The reason why I asked was because I saw tons of mouth watering 'how to cook Cajun Crawfish" videos on Youtube. It looked amazing and delicious. I figured there had to be guys out there who actually LIVED near where Crawfish were. I'm in 'crab' country, so I can get Pacific Crab any time I want, but I had a hankering for Crawfish for some reason
